Monkey Bait


Monkey Bait (Banana Donut Holes)
2T veggie oil, plus more for frying
1-1/2C flour
2t baking powder
1/2t salt
1-1/4t cinnamon
1/3C plus 1/2C sugar
1 egg
1/2C whole milk (I used skim)
1 Lg. banana (the ripper the better)
1/4t banana extract (optional)


You'll need about two inches of oil in a pan for frying. I use a medium sauce pan when I'm frying these. The oil should be at 375 degrees and you'll cook the dough until the balls are a nice brown sugar color. The balls expand while cooking so the larger the dough drops then the longer you'll need to cook them.

Mix the flour, baking powder, salt and 1/4t cinnamon in a bowl. In a separate bowl mix the banana, 1/3C. sugar, egg, milk and 2T of vegetable oil. (Add banana extract now, if you want.) I personally like the extra added flavor but its not necessary to use the extract. If you have a really ripe banana you should get an strong enough flavor. Add the remaining sugar and cinnamon to a bowl to dip the balls into after they have been placed onto a paper towel for a few seconds and that's it. You've made Tara's Monkey's Bait. Its yummy!
